Romanesco broccoli (also known as Roman cauliflower, Broccolo Romanesco, Romanesque cauliflower, or simply Romanesco) is an edible flower bud of the species Brassica oleracea.
It has a slightly nutty flavor when cooked. Closer to a cauliflower mixed with chestnuts, it is less bitter than its broccoli brothers. Its great when roasted.
Romanesco is a good source of vitamins C and K, fiber and carotenoids.
