Shaped like a small bumpy, being to pale yellow hazelnut. Hey have a dense buttery texture a mild, rich and nutty flavors, they also hold their shape when cooked. Very common in Indian Mediteraneean and Middle Eastern cuisines chickpeas are used cooked
They are available year round
Goes with: Herbs spices and flavors: Chilli, coriander, cumin, garlic harissa, lemon, mint, olive oil, parsely, tahini, turmeric.
Foods: Carrots, couscous, cucumber (when in season) lamb, olives, onion, pine nuts, pitas, red bell peppers, tomatoes.
NO cholesterol, Excellent source of fiber, folate and manganese. Good source of protein, iron magnesium, and copper. Contains saponins, protease inhibitors and physic acid which may help prevent certain cancers.
